Tasty, healthy dinner!

Hello Friends,
This weekend has been perfectly splendid, but more on that later dearies!
For dinner today, I made a beet and goat cheese salad, and Mushroom Brown Rice Pilaf.

Both Vegetarian, loaded with vitamins, veggies, and fiber, and so tasty!
